Ingredients
Mushrooms
- 250 gms button mushroom
- 250 gms black fungus
- 250 gms white fungus
- 250 gms shiitake mushrooms
Aromatics
- 1 onion
- 3 garlic cloves
- 2 green chillies
- 1 tomato
- 1 medium piece ginger
Spices and Other Ingredients
- 2 tbsp oil
- 1 tsp shahi jeera (black cumin)
- 200 gms butter
- 1 tbsp turmeric powder
- 1 tbsp red chilli powder
- 1 tbsp dhaniya powder (coriander powder)
- 1 tbsp cashew paste
- Salt to taste
Instructions
- Boil shiitake mushrooms
- Heat oil in a pan
- Add shahi jeera, chopped onion, ginger, garlic, green chillies and butter
- Add button mushrooms and sliced shiitake mushrooms
- Add spices:
- Turmeric powder
- Red chilli powder
- Dhaniya powder
- Salt
- Add chopped tomatoes
- Add the shiitake mushroom water and cashew paste
- Add black and white fungus
Notes
- Can adjust spice levels to taste
- Cashew paste adds richness to the curry
- The mushroom water adds extra umami flavor
- A mix of different mushrooms gives varied textures
