Ingredients

Mushrooms

  • 250 gms button mushroom
  • 250 gms black fungus
  • 250 gms white fungus
  • 250 gms shiitake mushrooms

Aromatics

  • 1 onion
  • 3 garlic cloves
  • 2 green chillies
  • 1 tomato
  • 1 medium piece ginger

Spices and Other Ingredients

  • 2 tbsp oil
  • 1 tsp shahi jeera (black cumin)
  • 200 gms butter
  • 1 tbsp turmeric powder
  • 1 tbsp red chilli powder
  • 1 tbsp dhaniya powder (coriander powder)
  • 1 tbsp cashew paste
  • Salt to taste

Instructions

  1. Boil shiitake mushrooms
  2. Heat oil in a pan
  3. Add shahi jeera, chopped onion, ginger, garlic, green chillies and butter
  4. Add button mushrooms and sliced shiitake mushrooms
  5. Add spices:
    • Turmeric powder
    • Red chilli powder
    • Dhaniya powder
    • Salt
  6. Add chopped tomatoes
  7. Add the shiitake mushroom water and cashew paste
  8. Add black and white fungus

Notes

  • Can adjust spice levels to taste
  • Cashew paste adds richness to the curry
  • The mushroom water adds extra umami flavor
  • A mix of different mushrooms gives varied textures
