Ingredients

- ¾ cup low-sodium beef broth
- ½ cup port wine
For Steaks
- 1 tablespoon vegetable oil
- 4 filet mignon steaks (1½ inch thick)
For Blue Cheese Crust
- ¾ cup crumbled blue cheese
- ¼ cup panko bread crumbs

Prepare port wine sauce:
- Melt butter in skillet over medium heat
- Add onion, garlic, and thyme
- Cook until onion is tender
- Add beef broth, scraping pan bottom
- Stir in port wine
- Reduce to about ½ cup
- Set aside (can be made ahead)

Cook steaks:
- Preheat oven to 350°F (175°C)
- Heat oil in oven-safe skillet over high heat
- Sear steaks on both sides until brown
- Transfer pan to oven
- Roast about 15 minutes for medium-rare (145°F/63°C)

Add cheese crust:
- Remove steaks from oven
- Transfer to baking sheet
- Mix panko crumbs and blue cheese
- Top each steak with cheese mixture

Finish and serve:
- Preheat broiler
- Broil 3-4 minutes until cheese is browned
- Let rest 15 minutes
- Serve with warm port wine sauce
