Ingredients

For Port Wine Sauce

  • 1 tablespoon butter
  • ½ cup minced white onion
  • 3 cloves garlic, minced
  • 1 tablespoon chopped fresh thyme
  • ¾ cup low-sodium beef broth
  • ½ cup port wine

For Steaks

  • 1 tablespoon vegetable oil
  • 4 filet mignon steaks (1½ inch thick)

For Blue Cheese Crust

  • ¾ cup crumbled blue cheese
  • ¼ cup panko bread crumbs

Instructions

  1. Prepare port wine sauce:

    • Melt butter in skillet over medium heat
    • Add onion, garlic, and thyme
    • Cook until onion is tender
    • Add beef broth, scraping pan bottom
    • Stir in port wine
    • Reduce to about ½ cup
    • Set aside (can be made ahead)
  2. Cook steaks:

    • Preheat oven to 350°F (175°C)
    • Heat oil in oven-safe skillet over high heat
    • Sear steaks on both sides until brown
    • Transfer pan to oven
    • Roast about 15 minutes for medium-rare (145°F/63°C)
  3. Add cheese crust:

    • Remove steaks from oven
    • Transfer to baking sheet
    • Mix panko crumbs and blue cheese
    • Top each steak with cheese mixture
  4. Finish and serve:

    • Preheat broiler
    • Broil 3-4 minutes until cheese is browned
    • Let rest 15 minutes
    • Serve with warm port wine sauce
