A creamy and comforting soup made with fresh broccoli, potatoes, and aromatic spices.

Ingredients
Vegetables
- 3 cups broccoli, chopped
- 1 potato, chopped
- 1 onion, roughly chopped
- ½ bell pepper (capsicum), chopped
- 3-4 garlic cloves
- 1 sprig cilantro
Base and Seasonings
- 1 tbsp olive oil
- 1 tbsp all-purpose flour
- Salt to taste
- 1 tsp pepper powder
- ½ tsp cumin powder
- 2-3 tbsp fresh cream
- 3 cups water/chicken stock/vegetable stock
Instructions
- Heat olive oil in a pot
- Add onions, garlic, bell pepper, potato, cilantro and broccoli
- Sauté for a couple of minutes
- Add flour and fry for another minute
- Add 1 cup of water or stock and cook for about 10 minutes
- Switch off and let it cool slightly
- Blend until smooth
- Return pureed soup to the pot
- Add remaining stock or water and heat
- Season with salt, pepper powder, and cumin powder
- Adjust consistency and seasonings to taste
- Finally add the cream and switch off
Notes
- Serve hot with croutons
- Can use vegetable stock for vegetarian version
- Adjust cream quantity for desired richness
- Blending in batches if needed for smoother consistency
