- Chicken bits, fried in bacon fat

Instructions
- Toast the bread and apply butter
- Add dollops of mustard mayo
- Prepare toppings:
- Caramelize the onion rings
- Par-boil the chicken
- Remove meat from bone
- Fry chicken in bacon fat
- Layer the sandwich:
- Add caramelized onions
- Add fried chicken bits
- Layer thinly sliced tomato
- Top with cheese slices
- Bake with one bread slice for 1 minute until cheese melts
- Add second bread slice and serve
