Base

  • Bread slices
  • Mustard mayo
  • Eggs
  • Bacon strips
  • Curry cut chicken
  • Onion
  • Tomato
  • Processed cheese slices

Sandwich Assembly

  • Mustard mayo
  • Caramelized onion
  • Fried bacon
  • Chicken bits, fried in bacon fat
  • Thinly sliced tomato
  • Cheese slices

Instructions

  1. Toast the bread and apply butter
  2. Add dollops of mustard mayo
  3. Prepare toppings:
    • Caramelize the onion rings
    • Par-boil the chicken
    • Remove meat from bone
    • Fry chicken in bacon fat
  4. Layer the sandwich:
    • Add caramelized onions
    • Add fried chicken bits
    • Layer thinly sliced tomato
    • Top with cheese slices
  5. Bake with one bread slice for 1 minute until cheese melts
  6. Add second bread slice and serve

Notes

  • Using bacon fat to fry chicken adds extra flavor
