Cucumber Mint Lemon Juice

A refreshing and healthy juice combining cucumber, fresh mint, and lemon.

Ingredients

  • 1 large cucumber (organic, non-waxed preferred)
  • 1 handful fresh mint leaves
  • 1/2 lemon
  • Pinch of sea salt (optional)

Instructions

  1. Juice cucumber with skin on
  2. Add mint leaves to juicer
  3. Squeeze in juice from 1/2 lemon
  4. Stir well
  5. Optional: add a pinch of sea salt
  6. Serve as is or over ice
  7. Garnish with fresh mint leaves and cucumber stick

  • Makes about 14 ounces (serves 1-2 people)
  • Can be chilled for later
  • Calories: 45-50 calories per recipe (about 25 calories per 7 ounces)
  • High in vitamins K, C and potassium
  • Use organic cucumber if possible for best results
  • Can adjust mint quantity to taste
