Cucumber Mint Lemon Juice
A refreshing and healthy juice combining cucumber, fresh mint, and lemon.

Ingredients
- 1 large cucumber (organic, non-waxed preferred)
- 1 handful fresh mint leaves
- 1/2 lemon
- Pinch of sea salt (optional)
Instructions
- Juice cucumber with skin on
- Add mint leaves to juicer
- Squeeze in juice from 1/2 lemon
- Stir well
- Optional: add a pinch of sea salt
- Serve as is or over ice
- Garnish with fresh mint leaves and cucumber stick

- Makes about 14 ounces (serves 1-2 people)
- Can be chilled for later

- Use organic cucumber if possible for best results
- Can adjust mint quantity to taste
