Dum Aloo Lakhnavi

A rich Lucknowi dish of stuffed potatoes in a creamy onion-tomato gravy.

Ingredients

For Potatoes

  • 1/2 kg potatoes
  • 100 gm crumbled paneer
  • Salt to taste

For Onion Gravy

  • 200 gm onions
  • 1/2 tsp garam masala
  • 1 tsp ghee

For Tomato Gravy

  • 200 gm fresh tomato puree
  • 1 tsp ghee

For Final Seasoning

  • 1 tsp red chilli powder
  • Salt to taste
  • 1 tsp garam masala
  • 1 1/2 tsp kasoori methi (dried fenugreek leaves)
  • 3 tbsp ghee
  • 1 tbsp butter
  • 1 tbsp cream

Instructions

  1. Prepare onion gravy:

    • Heat ghee in pan
    • Sauté onions with garam masala until glossy
    • Set aside
  2. Prepare tomato gravy:

    • Heat ghee in another pan
    • Cook tomato puree for a few minutes
    • Set aside
  3. Prepare potatoes:

    • Cut out potato cores
    • Deep fry the potatoes
    • Let cool
    • Mix mashed potato cores with paneer for filling
    • Stuff fried potatoes with filling mixture
  4. Final preparation:

    • Cook onion and tomato gravies in oil until oil separates
    • Add garam masala, chilli powder, and kasoori methi
    • Cook for 1 minute
    • Add butter and cream, mix well
    • Add stuffed potatoes
    • Simmer for 3-5 minutes

Notes

  • Traditional Lucknowi dish
  • Can adjust spice levels to taste
  • Potatoes should be firm enough to hold stuffing
  • Best served with naan or paratha
  • Can make gravy ahead of time
  • Ensure potatoes are evenly sized for consistent cooking
