Morning Meatloaf
A hearty ketogenic breakfast meatloaf combining eggs, sausage, and cheese, perfect for a low-carb morning meal.

Ingredients
Main Ingredients
- 6 large eggs
- 1 lb bulk sweet Italian sausage or breakfast sausage
- ¼ yellow onion, chopped
- 4 oz organic cream cheese at room temperature, divided
- 1 cup shredded cheddar cheese
- 2 tbsp chopped scallion
- Ghee for greasing
Instructions

Prepare:
- Preheat oven to 350°F
- Grease small loaf pan with ghee

Make mixture:
- Lightly beat eggs in large bowl
- Add sausage, onion, and half the cream cheese
- Mix thoroughly

First bake:
- Pour mixture into loaf pan
- Bake uncovered about 30 minutes until firm
- Let rest 5 minutes
- Remove excess fat from top if desired

Add toppings:
- Spread remaining cream cheese over top
- Add cheddar cheese
- Sprinkle with scallions

Final bake:
- Return to oven for 5 minutes
- Switch to broil for 2-3 minutes until cheese is golden
- Let rest 5 minutes before slicing
Notes
- Perfect for ketogenic diet
- Can use any preferred breakfast sausage
- Room temperature cream cheese blends better
- Excess fat can be removed after first bake
